Sourdough Sandwich Bread

Recipe

  • White Flour 600g
  • Whole Wheat 100g
  • Sourdough Starter 250g
  • Water 550g
  • Salt 20g

Autolyse all the dry flours with 525g of water and let rest for 1 hour

Add starter and salt in the remaining 25g of water

Knead together all of the dough ingredients

Let the dough rest and rise

Preheat the oven to 450° F

Bake the bread for 35 minutes

Reduce the oven to 400° F

Tent the bread with aluminum foil and cook for an additional 30 minutes

Remove from pan and let cool for at least one hour before slicing and eating.
